The relationship we have with AOVE comes from many past generations, which have been related to this product as a way of life.
Starting with the location, this olive farm is located in a unique enclave, at the convergence of the provinces of Malaga, Cordoba and Seville, in the geographical center of Andalusia, as if it were the heart of Andalusia, and a short distance from the Genil River, the largest tributary of the main river of Andalusia, the Guadalquivir.
Focusing on the farm, it is a traditional rainfed olive grove cultivation which, unlike other cultivation methods such as intensive, super-intensive or hedgerow -which are intended to obtain a higher production-, covers a much larger area of land per olive tree than in the other cases. This is a determining factor because, although total production is lower as there are fewer olive trees planted, the resources in terms of nutrients obtained directly from the soil by each tree are much higher, as each tree has a larger surface area available for it.


Since we are talking about the soil, it should be noted that these are clay-limestone soils, optimal for cultivation. This area is known as one of the best in Andalusia for olive growing due precisely to the quality of its soils.
The climate of the area is also ideal, since its extreme temperatures both in summer and winter “stress” the olive tree in a way that makes it get the best out of itself. Another important detail of our crop is that it is a rainfed crop, that is to say, it does not receive more water than the climate provides. Therefore, there are years with more rainfall and higher production, and others with less rainfall, in which lower productions are obtained, thus recovering the olive tree in a natural way.
Finally, we focus on the olive trees of the farm, which are of different varieties, among which is the variety selected for our AOVE: the hojiblanca variety, native to the area and recognized for producing one of the most powerful oils in terms of organoleptic and healthy properties. It is also worth mentioning that these olive trees are of advanced age, between 80 and 200 years old, being therefore consolidated trees with a great experience behind them.
